I go to Pho Vietnam first with a friend before gathering more information about the restaurant’s cultural authenticity. I order the pho vegetable, with silky rice noodles, a bounty of fresh greens, and that delicious, golden broth that has body to it and a hint of sweetness. (I am in heaven while eating this dish.) I order another favorite I’ve had elsewhere in town—the Vietnamese crepe—and I realize that I don’t know how to eat it properly. I want to eat it with my chopsticks, but it’s impossible to rip the large eggy pancake with chopsticks and still keep all of the goodness—shrimp, pork, and sprouts—inside. So, I start ripping it with my hands. There are several plates of various fresh greens—large lettuce pieces, fresh basil, cilantro, sprouts, and limes—but I’ll be honest: I am not sure what to do with them.
